Freshly-Milled Grain
For every bake. No industrial flour, ever. We start with fresh-milled whole grain, which means a higher baseline of B-vitamins, minerals, antioxidants and fiber than refined flour. Many customers who "struggle" with commercial bread find ours easier to digest with less bloating and a more satisfying feeling.
Nutritionally Superior
Nutrition science recognizes ~40 essential nutrients. When you mill the entire grain -bran, germ, and endosperm - and use it immediately, you preserve nearly the full spectrum of those 40 essential nutrients in meaningful amounts
Handcrafted
We use longer, lower-pH fermentation (sourdough or extended preferments) to cut phytate and boost mineral availability which can lead to better mineral absorption, a lower glycemic index, as well as antioxidant and prebiotic benefits.

Most store bought ‘whole wheat’ breads are made from lifeless flour that’s been stripped and reconstituted. Our bread starts with living grain, milled fresh, so it keeps its natural oils, enzymes, fiber and nutrients. You can smell and taste the difference and your body can feel it.
